Episode 01: I don’t like Schnitzel!
Schnitzel! Everyone loves it, but where is it from? For our first episode, we talk to Lukas Mraz, a renowned young chef from Austria who has worked in kitchens across Europe. Lukas returned to Vienna to work alongside his father, taking the lead at the family's Michelin-starred restaurant, MRAZ und SOHN, where he continues to explore reimagining Austrian cuisine. While Schnitzel is globally recognized as Austria's signature dish, Lukas challenges this notion, exploring other dishes that better represent Austrian culinary traditions. We also delve into his love for a Swiss variation of Schnitzel with ham and his fascination with what he humorously calls "sh*tty German food."
