The Poi Dog Macaroni Salad

The Poi Dog recipe for Mac Salad — unedited. The one we used in the restaurant. And probably my most requested (besides Mochi Nori Fried Chicken). There are no tricks to it, just boil the macaroni according to the box directions and then shock it in ice water immediately. Dice, then boil your potatoes starting with cold water and don’t screw it up. Salt everything enough. Skip the sugar, no matter what the aunties say.
Mac Salad Recipe
Serves 6 people
1 kg cooked macaroni
2 cubed and cooked potatoes
1 shredded carrot
5 g chopped parsley
A pinch of kosher salt
A pinch of ground black pepper
240 g mayo
1. Combine all ingredients in large mixing bowl except mayo
2. Mix mayo in into other ingredients. Use a spatula.
3. If mac salad sits overnight, more mayo may need to be added before serving
