Carnitas
Recipe by Micha Heiden
INGREDIENTS
1 kg pork in large cubes about 5 cm
( I prefer a mix from shoulder, neck and belly )
500 ml of Lard (Schweineschmalz)
Enough water to cover the meat
1 Tbs Salt
3 cloves of garlic
1/2 onion
1/2 teaspoon thyme
Juice of 1 orange
150 ml Coca Cola
METHOD
1. Place the pork, lard, water, orange juice garlic, and the rest of the spices in a large Dutch oven or cast iron pot.
2. After around 25 min into the cook add the cola
3. Cook the pork covered on medium heat for about 40 minutes, bringing everything to a boil.
4. After the meat is cooked, remove the lid of the cast iron pot, remove most of the cooked liquid, and reduce the heat to medium-high.
5. At this point, the meat will start frying in its fat for about 15 minutes.
6. Carefully brown the meat at medium-low heat, frequently stirring until the pork is crispy and browned evenly.
7. Serve on fresh corn tortillas add onions and cilantro drizzle a bit of lime on it and your favorite salsa I recommend a raw green one, but that up to you
