Zafer’s Börek Recipe
There are as many Börek recipes as there are families who make them. Here’s one of them!
Ingredients:
8 large sheets of phyllo dough (store-bought or homemade)
1 cup water
1/2 cup olive oil
500g minced meat (beef or lamb) or an equal amount of brined white cheese
2 large onions, very finely chopped
Salt and pepper to taste
1 cup plain yogurt
2 cloves garlic, minced
1 tsp dried mint
1 tsp chili pepper
1 tsp sumac
Instructions:
In a large bowl, combine the minced meat, finely chopped onions, black pepper, and salt. Mix well until all ingredients are evenly incorporated. Set aside.
If using store-bought phyllo dough, make sure it is fresh. Lay out the phyllo sheets on a clean surface.
Mix together the water and olive oil in a small bowl.
Take one phyllo sheet and lay it flat on the table. Using a pastry brush or a spray bottle, evenly moisten the phyllo sheet with the water and olive oil mix.
Cut the phyllo sheet into 4 equal triangles.
Take one triangle and spread a thin layer of the minced meat filling evenly over the surface.
Roll the triangle from the wide edge to the pointed tip to form a log shape.
Coil the log into a spiral shape to form a "rose."
Repeat the process with the remaining phyllo sheets and filling.
Preheat the oven to 180°C (350°F).
Place the shaped böreks onto a baking sheet lined with parchment paper.
Bake in the preheated oven for 25-30 minutes, or until the böreks are golden brown and crispy.
